While reading this Fark thread I came across the following:
Quote: You have to be careful with barbecue. Some of it is heavenly -- and some of it is excremental.
The absolute best BBQ* in the USA can be found in North Carolina. Texans think they have good barbecue...but they don't.
* Real barbecue is made from pork. Beef "barbecue" can be tasty...but it's not the real deal.
FIGHT!!

I prefer pork barbecue, but it's less about the meat that is barbecued and more how it is prepared. North Carolina vinegar sauce has been an acquired taste, and while, when done right, it is quite tasty, I'm more a red sauce guy, Tennessee style.
Never had Texas barbecue to speak of.
Since I am only a Tar Heel by residence, I hope the state will forgive me.

Apparently someone has never come to Texas and, you know...eaten any BBQ here. Pork BBQ is just as prevalent here as beef.
Ya see, here in Texas, you get a choice of what kind of BBQ you want. It's not just forced on you.
Send the lil' guy down here to me and I'll be glad to give him a first class education on BBQ, and life in general. I'm betting Robert would love to help as well.

The article is correct. I live in the upstate of South Carolina, which has traditionally been in a "sauce belt" that follows the practice of North Carolina. The lower part of the state prepares the meat in a similar way, but uses an ancient mustard-based sauce (dating back to the prevalent use of mustard as a spice by the german immigrants who heavily settled South Carolina in the 1700's).
James, if you ever do your "IMWAN tour," I've got some serious Q for you to taste, with all three sides available at the table -- Tennessee red, NC vinegar, and SC mustard-based.

We have a choice here, too. We've made it.
