Probably the non-Americanized version: Gojira. But I also rather liked Rodan, and Mothra vs Godzilla gets props really for being the first big monster square-off movie.
The only one I ever saw in the theater was Godzilla vs Megatron, so I have a fondness for the memory of having seen that one with a couple of my 10-year old friends.
I selected Destroy All Monsters but I'm really voting for Other: Godzilla Final Wars (2004), which was kind of an amped-up remake of DAM with awesome ninjas instead of loser scientists.

Difficult....I love KOTM the most, but Shin Godzilla is probably better, and neither will be remembered as well in 2 decades as the original. So 1954 Gojira it is.
I have three I especially like: The original black-and -white Gojira, Destroy All Monsters, and Godzilla vs. The Smog Monster.
Each of them is completely different. Gojira is serious and brooding, Destroy All Monsters is crazy fun, and Godzilla vs. The Smog Monster is sometimes disturbing and sometimes hilarious. It reminds me of some of the psychotronic exploitation films of the seventies: druggy camera techniques, weird music, all of that.
I'm a huge Godzilla fan, mostly because I grew up watching Creature Feature in Boston.
The Original, followed by the Ghidorah, the Three Headed Monster.
Godzilla turning from "heel" to "face" is part of the same heroic arc of the Silver Age of Comics. Mothra (who was always benevolent) tries to convince Godzilla and Rodan (who are fighting each other) to join forces to fight Ghidorah, who is an extraterrestrial monster with sufficient power to destroy Earth.
Godzilla and Rodan do not listen, and Mothra decides to take on Ghidorah by herself, though she is clearly not powerful enough. Watching Mothra get curb-stomped by Ghidora causes Godzilla to have a change of heart, and to turn his might upon Ghidorah (defeating him).
From that movie onward in the Showa era, Godzilla was a heroic, alpha-defender of Earth. 'Twas not always so.
