Some bands/musicians have so many releases - it will take a lifetime for a new fan to complete the catalog,

Which artist have the largest catalog?

Zappa has 110 titles listed but I thing it is somewhat less - knowing off the Old Master boxes, the SUNPYG box (as the 3 lps are already in the count), Baby Snakes download and there might be one or two more.

Not a complietist but I read the Greatful Dead have 140 releases.

Both Elvis and Johnny Cash clock in at around 100 but they have so many comps and deluxe releases they have to be over 150.

If you count the instant releases you have to consider the Allman Brothers.

Dylan only has around 90 but he has been around so long and active - eventually he will surpass everyone.

Any others?

If you toss out live albums and comps, Rick Wakeman (surprise!) has to be near the top. Discogs lists 125 albums (including live, but not comps).

For sheer amount of recorded music available commercially, I'd bet on King Crimson. Countless live releases, box sets with 20+ CDs...

Oh, and Willie Nelson is still releasing 3, 4, or 5 new albums every year, it seems.

Get into some jazz and classical guys and you really see some huge catalogs: Miles, Ellington, Toscanini, Richter, Heifetz, Bernstein, loads more.

Not sure I'd include instant releases. That would probably put bands that record every single show and tour constantly in the 1k+ range.
