Did you read "Rocks Off: 50 Tracks That Tell the Story of the Rolling Stones" by Bill Janovitz? I checked it out of the library and liked it quite a bit. It's a selection of the 50 songs he thought were important, so it's a bit idiosyncratic, but I thought it had a good selection of songs and I enjoyed his description of how the songs were written and recorded.

It's weird-this is missing some songs and some of the facts are off from the little things I've read.

Also does a weird thing with the live albums.

Still a cool tome and very detailed, but not perfect by any means.
