The thing I remember most (besides Erik Estrada's teeth) are the huge freeway pileups they'd always have. Like 5 minutes or so of various cars all crashing into one another, flying through the air, and exploding. All after a little fender-bender or someone stopping too fast.

As a kid I thought a minor accident in California meant hundreds dead.
Me too, but I only recall it happening once in the series. I was shocked at people being killed, because that didn't happen too often on "CHiPs."
My memories of the series are very scattered. One that stands out is of a pet store truck crashing and 13 black cats jumping out and running across Ponch's path. He spent most of the episode thinking he had been hexed or something.
Looking back it's funny to see the artistic license they took to enable Ponch and John to have conversations while riding on their bikes. Two riders riding side-by-side on different bikes CAN have a conversation of sorts, but only in congested traffic where you have to start and stop a lot. One says something at one stop, the other replies at the next one. I met a local biker on the way back from Key West like that a couple of years ago.
