You know what I'm going to recommend; Space Battleship Yamato 2199! Also for good goofiness Lupin the Third (which is on Hulu). For fantasy/action in modern times, Fate/Stay Night, and Fate/ Zero (Which even though it's a prequel to F/SN, you need to watch it 2nd.). For zombies and lots of T and A, High School of the Dead. These last 2/3 are the ones that have interested me over the last couple of years, and I've been pretty picky about what I watch.
You can try Evangelion, but be warned, it's depressing and not a fun show.

Is Yamamoto 2199 the same as Star Blazers? I grew up on that and Battle of the Planets.
Starbalzers was the Americanized version of the original Yamato series (well, the first 3 actually). SBY 2199 is a revamp of the 1st series, with some updating of characters and state of the art CGI/Animation. Same story, with a few differences. And it looks fantastic.
I've enjoyed numerous anime throughout my life, from the original Speed Racer, to Starblazers to Akira and the Miyazaki films. There is a certain level of it I like. Then, about 10 or 15 years ago, I happened upon ""Graveyard of the fireflies". Let's just say that--while beautifully animated---it doesn't mean a whole helluvalot when the story *starts* with starving, dieing children. It really killed ALL anime for me and I didn't go back or near anything anime for all that time. Until I checked out Attack on Titan on Netflix on a recommendation from my son. My one gripe would be that sometimes, you've got to spend time reading the subtitles when you'd rather be watching the beautiful animation.
Yeah, Grave of the Fireflies was a real downer. The real-life story it's based on is, of course, even more depressing.
Re: Akira, it took me three tries before I was able to see the whole thing. The animation is incredible but something about the story kind of disengaged me a couple of times. I should probably check out the comic book at some point.

If you're looking for something more lighthearted, there's always "Azumanga Daioh" and "School Rumble."
"Tsubasa: Reservoir Chronicle" is kind of fun to watch, although it's hard to make heads or tails of what's going on with all the parallel universe stuff that's happening.
I recently watched an interesting series called "Mai HiME." It's about a school for superhumans--or rather a school where superhumans are hidden among the student body. I can hardly watch parts of it for the fan service, but there's some startlingly effective drama and action in there as well. And a couple of cool motorcycle scenes.
