I'll pick Game of Thrones, but I also like The Newsroom, The Wire and True Detective.
EDIT: I didn't read carefully, and missed Deadwood. That's probably my favorite show of all time. Oh well.

The first show that made me wonder if HBO might actually have a shot at competing with networks was Oz.

I thought Oz was outstanding in the beginning, evoking a fear that I had never felt before. Like Queer as Folk, though, Oz became a parody of itself. How many times can a prisoner kill, rape or set another prisoner on fire another because the guards aren't doing their job?

Sopranos.
Deadwood would have my vote if it had been able to properly end, because it was amazing.
GOT is intriguing at times but it really is like a big board game---"My army is going to fight you and take YOUR throne! Rotate! Now kill all the good guys!" Step and repeat, step and repeat. And for christ sake, kill Geoffrey already!!!!!
Boardwalk is also a quality show but Buscemi is not a lead guy and it shows.
True Detective is AWESOME---but so far, only 5 episodes, so I can't really compare it any of the others.
Curb is a great comedy but apples and oranges here.
Entourage---eh.
The rest I've never watched except maybe an ep each. Didn't have a clue what was going on in Wire, and I couldn't stand the accents in True Blood.

I couldn't even make it halfway through the first season. Whatever switched needed to be click to make it one of the greatest shows of all time never connected with me.
