A little goes a long way. You're right.
The key is to make the Hulk movie an ensemble movie, where we get invested in some characters and situations (truly invested). To the point where we feel like Bruce has got to make a sacrifice. Or to the point where the Hulk showing up is a surprise.
I think this problem is one of the reasons the Hulk is one of Marvel's coolest characters, but rarely sustains interest in a long term ongoing.
Myself, I'm drawn to the books where the main character is a hot mess and we get interested in the supporting cast, like Gerber's Man-Thing or Marvel's horror comics in the 1970's.
