Martin says that he's only writing one episode per season and will be Executive Producer because he's going to be finishing A Dance With Dragons, The Winds of Winter, and A Dream of Spring.

This sounds pretty cool. I love the books, and I like the approach of one novel per season. Plus, it's HBO so they shouldn't have to tone it down too much (although lots of the underage stuff will be gone).

Out of deference to those who may not have read all the books, I'm going to put the bulk of my response in a spoiler warning:
I have a problem with this "each book = 1 season" concept, but it's minor.
Rickon was 4, Brand 6, Ari 8 and Sansa 13 when the series began. Four books have passed and they've only aged two years at the most. That will be impossible to do if they film each book as a single season (and books 4/5 will need to be folded into two seasons together, since they take place concurrently, meaning Book/Season 6 will be two years later in real time but in the book little time will have passed).
So something about the time disparity will have to be dealt with.
I also have concerns that a) the book series will not be finished by the time the t.v. series catches up, considering how long it's taken Martin to write only four books out of what he claims will only run seven (and considering he originally intended it to be a trilogy, I cast serious doubt on his ability to finish the story in seven books).
And, finally, I have doubts that the t.v. series will actually run to completion -- consider, for example the fact that aside from the characters I've mentioned, other than Jon Snow (and, you could argue, Tyrion), all the sympathetic, likeable, positive characters that the audience can sympathize with have all been killed -- and the rest have succumbed to horrifying, terrible events and tragedies.
Granted, that works for the novels, but I don't know if it will be enough to sustain a television audience for that many seasons. I could be very wrong -- and I hope I am -- but I really feel leery about investing time and interest in a series of this magnitude, based on books that I absolutely love -- only to have it be canceled after season four.
On the positive side, who else thinks Peter Dinklage would be perfect for Tyrion?

Excellent casting for Tyrion.
The age of the kids is going to be a problem for a lot of reasons, and I'm starting to think they might just make them all older teens. It's hard to imagine a TV show filled with 4-15 year olds as the leads that features all of the sex and violence that the Martin books do. Looking just at Dany's arc over the first 3 books, there's no way they'll have all of the things that happen to her happen to a 13 year old girl.
There's also casting. Young actors that are talented enough to pull off that kind of material are few and far between. There are far more Jake Lloyd's out there than there are Haley Joel Osments.
I'm not as worried about the series catching up to the books, simply because HBO usually has a much longer downtime between seasons.
Finally, my left-field, never going to happen casting choices for Jaime and Cersei would be Kiera Knightly and Orlando Bloom. Simply because they look so much alike it creeps me out.

Super mega-dittos to what Jason and John said. I should be amped about this, but with the books as yet unfinished (and the idea that he can wrap it up in a few more books questionable), I have some reservations about this.

Well, apparently he has most of the series mapped out in outline form and a lot of chapters written for the upcoming books. Hopefully he can just buckle down and get them done!
You guys are probably right about the ages of the children though, given the sex and violence in the story.

I think we'll end up seeing some sort of "Dawson's Creek with swords and nudity" on HBO.
Well, apparently he has most of the series mapped out in outline form and a lot of chapters written for the upcoming books.
I'd really like to believe this, but....I don't. As much as I liked the latest book, it did feel a bit padded. Whether this is for financial or artistic reasons, I don't know (maybe it's both), and I don't really care - I just want him to finish the damn series before he shuffles off.

The most recent book didn't feel padded to me - it was just disappointing as hell after the awesome Storm of Swords. I just felt let down.
It didn't help that I had waited so long for Crows only to learn that most of my favorite characters have been held over for the sequel, which may not even arrive in 2007.
I did like the Jamie Lannister subplot, though. Jamie is probably my favorite character, after Tyrion. When I met GRRM at a con, I remarked that he did a great job making the villains interesting - the Lannisters are the most fascinating House in the series, bar none.
