Medium. (the only exception is a couple of restaurants who when i saw medium, I don't get medium-then I say medium well).

I've adjusted down from medium well to medium. Back when I was asking for medium well, chefs refused to serve me what I wanted. I don't understand this. If you are going to offer me the choice of preparation in the first place, please honor it. I changed because I got tired of fighting.

Same here. I like it best a true Medium Rare. But it would come out Medium to Medium Well
So I adjusted to Rare. When someone gives it completely Rare. I still enjoy it more than Medium so I am OK. But few restaurants truly serve rare.

I like mine well done. I don't mind it medium well but I usually get mine from my family and when I ask for meduim well they usually give me medium rare. I like the taste of burnt food (Not like charcoal taste though) so having it done a bit more than I want is very preferable to less for me.

Medium Rare - I want the meat to be a uniform texture, as opposed to raw in the middle, but nice and red below the char.
And just salt and pepper. I used to do more, but a good piece of beef just needs some S&P while cooking.
