It's been revealed to us by now that Vader is actually a whiny conflicted little bitch. Kirk would find a way to outpsych him!  Now if you just took the ruthless, cold, remorselessly cruel Vader from Empire, then I'd have to say Kirk wouldn't pull it off.

But I'm pretty sure the Enterprise crew could outwit a star destroyer. Remember, they've got transporter technology and the Empire apparently doesn't. They could beam on, plant a bomb in a critical spot (or maybe just steal a really important widget from the engine room) and beam out again before the storm troopers knew what hit them. Yes I've actually thought about scenarios like this.

it's not really a contest.
Kirk v. Han Solo makes more sense.
