I've begun using my PS3 as a media server, streaming video from my Mac over my home network using "PS3 Media Server." The PS3-MS seems to like files that are 600MB or under, but most of the stuff I'm encoding are episodic (i.e. 30 minutes or so), not feature length, so I think I should be able to get pretty high-quality with a 600MB file size threshold.

I'm in no rush, so am fine using slower settings if it will result in better video quality.

Any advice?

I'm fine with the normal, H.264 setting.

I've had no problems streaming with PS3 Media server files over 4 GB in size. I'm on PC so maybe it works less well on Mac.

As much as needed. Remember, your front-wheel hand brake is 70% of your braking power. Just don't get down on it too hard in gravel!
