While Elvis Costello's first three albums are obvious classics, I feel (and I know I'm in the minority here) that he went into a long steady decline that was at first gradual (the 1980s) and then speedy (the 1990s and 2000s). In contrast, I've really enjoyed all of the Talking Heads albums. The only TH album I've never heard was their last.
Another reason I feel this way is that I saw both live (once each). The Talking Heads show (1981 or 1982) was one of the best live shows I've ever seen, and they sang and played like they were having a blast! The Elvis Costello show (circa 1983 or 1984) was one of the worst and laziest performances I've been to. Despite numerous pleas by the audience (to play his more hard-rocking performances) 90% of the material he sang were sappy ballads. He was, in general, very indifferent to the audience, whom he barely spoke to. Oh, yes, there was no encore.
I just listened to the preview bits of Momofuku that Amazon has posted. From what I heard, this is the Elvis album I've been waiting the last 15 years for.
