1) I'm picking one favorite deep track per album (which is gonna kill me for certain albums). 2) I'm not going in order of release. 3) No set timetable for this. Give 'em time to sink in a bit. 3) If many of them are ballads, hey, what can I tell you?
Of course, discussion is encouraged, as well as naming your own favs.
Voodoo Lounge (1994): "Moon Is Up." Nice relaxed groove. I was pleasantly shocked when this track was featured in the 2015 movie A Bigger Splash with Tilda Swinton.

I instantly thought of my favorite Stones song "Dance Pt. 1" which has a funky, choppy, slightly-Disco vibe of the streets (NY streets) that gets my ass shaking every time.
Ron Wood co-wrote this one and the bass, drums and snaky guitars are sublime and Mick's falsetto kills.
I believe Mel Collins laces in some tasty sax too.

I'll take a partial stab at this. It's tough because they had so many hits, & those are many of my favorites. Some of my choices may seem to be too popular to some for the topic........

Sticky Fingers "Sway" "Can't You Hear Me Knocking" "Bitch" "Sister Morphine" "Dead Flowers"
Unofficial contract breaker "CS Blues"
Goat's Head "Silver Train" And if this is deep enough.... "Star Star"
Undercover Yet another that may be too popular... "She Was Hot"
I have almost all of the catalog, but again I tend to like the hits the best.

This is a fair point. I suppose I just took it to mean album cuts that aren't routinely on the playlists of most commercial radio stations, etc. Stuff that only fans, or fans who listen to entire albums, would know about. I'm sure there's loads of great songs of theirs I've just forgotten. I don't listen to music much these days, or I don't sit and listen to it like I used to, so it should be fun to see what people can come up with that might jog my memory.
I just remembered this one from Black and Blue, incidentally...

my favorite 'voodoo lounge' deep track is 'thru and thru'....used in an episode of the sopranos just perfectly.

I figured there'd be some debate over what counts as a "deep track" especially for a group like the Stones. For me, in the context of this thread, any track released as an A-side of a single in the US is off limits.* Radio play is a factor too, but having been glued to WNEW through much of the 70s and 80s, one was likely to hear a great many deep cuts--they even used that as a programming tactic at some point.
Of course, I'm loving reading everybody's own selections and comments.
* I may cheat on this rule myself when I get to Metamorphosis.

Tattoo You (1981) "Heaven." Hypnotic, haunting, sensual. Mick never deviates from his falsetto vocal delivery. The shimmering chimes in the mix add to its dreamlike quality. Marvelously subtle drum-work by Charlie. I was most impressed when Cameron Crowe used this on the soundtrack to Vanilla Sky.
