Been awhile since I heard the original, but IIRC, the most faithful cover is the Beach Boys'.

I completely agree with earlier mentions of "I Fought the Law" and "Proud Mary."


Let me add:

"Jambalaya" - Hank Williams or John Fogerty?
"Night Time is the Right Time" - Ray Charles or Creedence Clearwater Revival?
"The Weight" - The Band or Aretha Franklin?
"Shapes of Things" - Yardbirds or Jeff Beck Group?
and
(Any original blues classic - covered by the Allman Brothers)
