Gene Roddenberry's creation has inspired its share of documentaries...
Trekkies:one season Trek star Denise Crosby takes a look at the fans of the show she left, and asks the question,"Who are these people?"
Mind Meld:Shatner and Nimoy talk Trek, and wonder why their co-stars can't accept the fact that Shatner and Nimoy are the real stars of Trek.
Despite its title,How William Shatner Changed The World is really about Star Trek.It looks at how a TV show inspired inventions in the real world, such as cell phones and compact discs. It also gives us the sight of The Shat sitting on a toilet.Thanks,movie.
The Captains:Shatner may or may not be an egomanic, but he's a pretty good interviewer. Here he and the other actors who played starship captains discuss the effect the role had on their careers and personal lives(both Shatner and Bakula cite the long hours of filming as contributing to the breakup of their marriages).
Trek Nation:Roddenberry's son takes a look at his father's creation.
What I'd like to see is a good,even-handed backstage look at how Star Trek was created, free of studio puffery, one where Roddenberry is neither deified or demonized.Haven't seen one yet;recommendations appreciated.

I liked Trekkies, but haven't seen the others.
