It depends on the mood, but I think I'm gonna pick roast beef right now, because I don't have it very often these days, so it seem more special also I associate them with Yorkshire Pudding, which I think is like one of the best foods ever!
I like most of the other stuff on the list a lot too though, basically everything except Roast Pork which I'm not crazy about and Prime Rib, which isn't bad but it's just wasted on me because I tend to like my steaks well done. I did have one I loved, but if they're not cooked perfectly than I often find them to be underdone for my tastes.

I have been eating meat on and off, lately. When I do eat meat - ham and chicken When I don't - vegetarian lasagna or mac n cheese

Here are my thoughts.
Ham and turkey are great, but too easy to screw up. People LOVE to overcook both. If the ham isn't juicy and pink, I don't want it.
Roast chicken is good and all, but kind of boring. Same with roast beef.
Roast pork is delicious, but not my favorite.
I love rare prime rib. Give me some of that and I am happy.
But my favorite is leg of lamb. So good. Unfortunately, not many people like it as much as I do.

I like turkey the most. One of my favorite meals is turkey, mashed potatoes, stuffing and gravy.
All the others sound good, but none really get me too excited (well, maybe prime rib).
