I took Guy's complaint to be that because the restaurant was only opened for 2 months at the time, problems should be expected and the 4 visits should have been spread out to when the restaurant had been opened 6+ months.

It's stupid of Guy and it should be good from day one but it's my guess what he means.

Folks in the restaurant business will tell you to give a restaurant a couple of months of operation before giving them a try. Not that they shouldn't be 100% from day one... But if you want a good representation of their dining experience, you should wait a while so that they can get the kinks out.

Not sure what the SOP is with critics. But as a patron, you should either steer clear or expect some hickups from a brand new restaurant.

I think if you're a nationally renowned TV celebrity chef who opens up a giant-ass restaurant in Times fucking Square, a review after two months seems like pretty fair game. This is neither Ma's Diner on one hand nor Chef Esoterica's culinary experiment on the other. It's a big commercial enterprise.
