The funny thing about that line is that it was meant to show the audience at that exact moment that T2 was a good guy, by using Reese's line from T1. Unfortunately, there was SO much advance press and previews and stuff that made a point of spoiling the fact that T2 was the good one and T-1000 was the bad one, that the effect was ruined.

The trailer basically told everybody Ahnold was the hero in this movie. I bet those same guys would have put the "Luke, I AM your father" line in the trailer if they were working for Lucas...

By the time that T2 was filmed, Arnold was only playing good-guy roles. They probably thought the audience wouldn't go for it if he was the evil terminator again.
Don't think he played a villian again until Batman Sucks--you know, the 4th one.
