I haven't made truffles in a long time. I lost my favorite recipe - no raw eggs and it thickened by beating not refrigerating, so was stable at room temperature. I can't for the life of me remember what cook book I got it out of, except that is was a library book.
I entertained the idea of becoming a confectioner at one point, so was doing a lot of research on recipes.

I thought truffles were something you dug up out of the ground after using a pig to sniff it out for you?

What...did they mince up some of this very expensive fungus and use it to flavor the chocolate truffles? No. As I learned recently, "chocolate truffles" are named truffles because they are formed to resemble the truffles fungus (shaped into irregular round shapes like the fungus, and covered with cocoa powder to resemble dirt on the fungus balls).
