I'll go with Seventh Seal over TFA, mainly, because Max was the star in the former and just made a cameo in the latter.

I can't choose between Conan The Barbarian or Flash Gordon.
I may have to vote for Flash Gordon just because Max is the main villain in that one, not just a supporting character. I agree with Steve's comment about how any appearance by Max in any movie is always a welcome surprise. Dune would be in third place out of all my choices. He was amazing in that. He's really one of the best actors not only of the 20th Century but probably of all time. Not that I'm an expert, but Max manages to convince you he's really whoever he's portraying even though you know very well he's Max von Sydow.
